Synchrotron Radiation Microbeam X-ray Analysis of Fat Crystal Nucleation on Emulsifier Crystals

本研究では, 油脂にパーム中融点油脂, 乳化剤にソルビタン脂肪酸エステルを用いて, 放射光マイクロビームX線回折法によって乳化剤結晶のラメラ面の配向と格子間隔が油脂の結晶化に及ぼす影響を調べた. STS添加PMFの回折リングは円弧状または同心円状であり, STSとPMF α 型の結晶のラメラ面の配向はすべての位置においてほぼ同じ向きで結晶化していた一方, STB添加PMFでは, PMF 型の回折リングは濃淡のある円弧およびスポット状のパターンを示し, STB結晶のラメラ面の配向と一致しない位置も認められた. これらの結果から, STS添加PMFではエピタキシャル成長, STB添加PMFでは不均一核形成によってPMF 型が結晶化し, 乳化剤結晶と油脂結晶の格子間隔 (分子の長さ, 副格子構造) の類似度によって, PMFの核形成機構が異なることが示された. また, それらがPMF 型結晶のラメラ面の配向に反映されたと同時に, PMFの結晶化開始温度や結晶数にも現れたことが明らかとなった. STB添加PMFにおいて, STB結晶はα 型に類似した構造であったにもかかわらず, 型が不均一核形成したことについては, STB結晶とPMF 型結晶の鎖長の違いに加えて, 親水基を含めたSTBの立体構造が影響したと考えられる.
